  "abstract" : [ "ger: Auf den gesättigten Lebensmittelmärkten existiert ein hoher Preis- und Wettbewerbsdruck. Hohe Produktstandards und eine weitgehend homogene Wahrnehmung der objektiven Qualität führen dazu, dass erst über die Produktbeschaffenheit hinausgehende Eigenschaften zu einer Produktdifferenzierung führen. Die Lebensmittelproduktion findet zusätzlich in einer komplexen, arbeitsteiligen und durch Entfremdung geprägten Umwelt statt. In diesem Umfeld bedeutet eine größtenteils gleichwertig wahrgenommene objektive Qualität nicht gleichzeitig, dass die Produkte als gut empfunden werden. Die große Produktvielfalt bzw. fehlende Bewertungsmaßstäbe für die Qualität der Produkte verunsichern die Konsumenten im Hinblick auf die Qualitätseinschätzung (wahrgenommenes Risiko). Deshalb orientieren sich die Verbraucher an cues wie Marken, Preisen oder der Herkunft, um die Qualität der Lebensmittel zu beurteilen. Diese Kriterien senken gleichzeitig das wahrgenommene Risiko der Konsumenten im Umgang mit Lebensmitteln und stiften ihnen einen Zusatznutzen hinsichtlich der Befriedigung individueller und altruistischer Bedürfnisse. Im Rahmen der vorliegenden Studie basiert die Analyse der Wettbewerbschancen regionaler Lebensmittel auf der Annahme, dass Herkunftsangaben als cue für die Qualitätsbeurteilung von Lebensmitteln dienen. Die Marktstudie zeigt im Zusammenspiel mit der Literaturanalyse, dass regionale Lebensmittel als qualitativ hochwertig angesehen werden. Dennoch werden geäußerte Präferenzen für Produkte aus der Region am Markt bislang wenig umgesetzt. In Gruppendiskussionen wird aufgedeckt, dass nicht nur die im Rahmen anderer empirischer Erhebungen ermittelten altruistischen Bedürfnisse die Wahrnehmung von regionalen Lebensmitteln prägen, sondern die Vertrauensbildung im Umgang mit den Produkten allgemein.
